All persons who handle food for sale must be trained in food hygiene to a level appropriate to the type of work done.
Food handlers must have an appreciation of the importance of any controls and necessary monitoring identified by your food safety management procedures. Where food handlers prepare or handle open high risk foods it is recommended that they are trained to a level equivalent to the Chartered Institute of Environmental Health (CIEH) Foundation Food Hygiene Certificate.
